We have already harvested all of the onions and beets.



We made pickled beets and roasted veggies with both the onions and beets. We also used onions in other meals since we had quite a few. We even ate the beet greens. Looking ahead, not sure whether we will do onions and beets again in this space. We loved them and it was fun trying them, but for the amount of space they take up, you really don't get much from them. Each stalk only has 1 beet/onion and for our small space, not sure it was worth it.
We've also had a ton of green beans and cucumbers. I planted a ton of both since we love them so much. We've had cucumbers almost every meal for the last couple weeks! We love to slice them really thin, add vinegar, water, salt, and pepper, let them sit for a little bit, and then eat. Almost like pickles but so fresh!


Our tomatoes aren't looking as good as we'd hoped. Don't know why. Our pepper plants are taking awhile, too.
We've also enjoyed basil, thyme, rosemary, and a few strawberries.
